THE GOAL: 100 Recipes - in the Professional Chef Textbook. Is that enough to learn the basics of cooking like a professional chef - using nothing but the written word (in any format)? Obviously, it won't be everything.. but I want to know is 100 recipes enough to understand the basics - from sauces to poultry to vegetables? Where are the areas that simply must be taught in class? Any ideas?

Baked Fish... Needs more work
Tried the fish tonight (Baked Fish w/ Tomatoes and Mushrooms) - basic recipe - ended up trying it in the toaster oven. It was ok.. nothing to do with the toaster oven, but it needs more seasoning. Bryan put Season All on it.. I know the chefs-that-be would turn over on that one.. but it needed more seasoning. I guess a marinate? Good learning experience, though!
