Well, it was time to try my hand at a pasta dish.. and I love gnocchi, so why not start there? Boiling potatoes, no problem. Adding some eggs b/c I was using waxy potatoes (vs all-purpose potatoes) - check. Add flour... check. Wait... there's a lot here. And I still have to do the sauce.. and people will be here in 15 minutes!
Ok.. so here's where I took the shortcut. I made the pasta about 4x too big - and so instead of being about 1/2 an inch in size, they were about 2 inches... so when they went into the boiling water, they fluffed up - and never quit kept their shape. So, Potato Gnocchi became.. Mashed Flour-stuffed Potatoes. Not bad tasting.. but hey, good to know. :)
