A return with Salad!


I'm back.. after almost a month (has it really been that long? It feels like only yesterday!) It was a wonderful wedding, and we had a great honeymoon in Europe, visiting some great known culinary countries (Spain, Germany) and trying some new ones (Denmark, Sweden).

I decided to start with something light (but interesting) - so the Grilled Chicken Salad with Walnuts and Blue Cheese was the perfect (re)beginning. It was simple (which was also good - since I've been out of the kitchen for a few weeks! :)

I did my first poaching with chicken breasts in a chicken stock - which you couldn't tell (Bryan couldn't) - but I could taste the difference. Also - "Belgium Endives" were added (according to the Belgium Endives website- "These tangy, tender and delicious white vegetables were actually discovered there in 1830". As for the difference here... well - they WERE nice to look at - and added another crunchy green to the plate, however, the taste was ok. That's fine.. we are talking about lettuce.. not fine chocolate (yummm.. don't get me started on Chocolates from Sweden!!) - but when I make a variation of this recipe again (and I will - it was good, and filling!) - I won't feel the need to go after the endives.

However- I thought it was a simple recipe, and turned out very nice... one of my first exercises in "plating" the dish.
