Salad time

Ok.. ok, it's been a while. Ok.. longest since I've started. However - to beg pardon - I'm getting married in less than 3 weeks.. so I have a few other distractions right now! :)

Back to the cooking. We were having friends over for a cookout last night - so many things I'd like to cook are now really too heavy due to 85+ degrees outside (who wants chili on a hot June night?) - so I turned to the salad chapter yet again.

The main recipe was a Dilled Shrimp - however, I thought crab would be much better - and I was not disappointed! Our guests were not huge seafood fans, however the comments were positive. A little light mayo, dill, and celery - were the main drivers to make this really nice summer salad.

The potato salad.. well, it was different. First, it was the French kind.. which my callout is it's not my (southern) mother's potato salad. (ha ha) It could be served hot or cold - we did a little of each (I cut the recipe in half - and almost half again - but still - 2.5lbs of potatoes is a LOT of potato salad) - we even put them in the oven to cook them a little.

To be honest, I wasn't as big of a fan - but not b/c the recipe was wrong. I added both salad oil (in this case, a simple extra virgin olive oil) and a wine vinegar to the onions, tarragon and parsley - which brings the "French" to the recipe (or so it says) - but the extra oil doesn't really do it for me. Bring me the mayo and eggs. We'll see in the next potato salad recipe...
