So tonight was an added bonus that I didn't expect.. Bryan came home when he was supposed to be on the road... so I was able to cook for more than myself!
Bryan LOVES Jerk Chicken, and although I have tried, and am loving this cooking thing - I just don't do well with spicy foods. So... I said I'd try it, but had a back-up with Grilled Chicken with Garlic and Ginger.
The one oopsie was not marinating either for very long.. however, it really didn't set it back that much. (It's really true what they say... cooking is a hell of a lot easier than baking!). They were both relatively simple recipes... a handful of spices, some garlic (in both) - and about 10 mins on the grill. Bryan said he had Chinese on call as a backup plan....
Fortunately, he didn't have to.. yay! Both were pretty good - the Jerk Chicken (which even I could eat.. but prob b/c I made it with a Poblano pepper instead of the Scotch Bonnet chilies it called for..) packed flavor from the very beginning.. without too much punch... whereas the Ginger Chicken was a little less bold, a little more savory, and one, that I think would be nice with rice or pasta.
