It's been a few days since I've really cooked anything - mostly driven by my work, which ratchets up at the beginning of each month. However, the final round of the NCAA tournament is upon us, and that means having people over at the house - so more cooking is needed, of course!
I started with the Hummus (Recipe #3), or Chickpea Dip, an international-labeled recipe. One of the things I love about this project is learning about new foods. For example - know what's in hummus? Chickpeas (you probably knew that if you had hummus before), Tahini (sesame paste - looks a little like peanut butter put in a blender - very smooth - and even smells a little like it!). The other items - garlic, lemon juice, and olive oil, give it the consistency.. and they we deviated a little (hey, the recipe said we could). Alas - I can't handle my spicy foods well, so I couldn't handle much cayenne. But we DID put a little Seasonal in there (ok... Bryan did that, but it was good!) and a little sundried tomato spices from Pampered Chef.
The result - some really good hummus! (so says the crowd - even Bryan, who wasn't a hummus fan)... and it's good for you, so I'm going to try to make some more and put it with celery as another friend last night suggested!
Recipe #4 was the Baked Chicken - my first time making it (yes, my friends, I have lead a sheltered life). It was a relatively easy recipe - and a basic herb mixture of salt, white pepper, paprika and thyme with a little flour and butter - set at 350 degrees, and we were GTG! The only variation I really did was use chicken breasts instead of "Fryer Chicken Parts" - a little healthier, I think, and no worse for the wear!
Now.. on to Easter cooking - going to a friend's for Easter lunch. More on that.. in a little bit. :) Happy Easter!
