THE GOAL: 100 Recipes - in the Professional Chef Textbook. Is that enough to learn the basics of cooking like a professional chef - using nothing but the written word (in any format)? Obviously, it won't be everything.. but I want to know is 100 recipes enough to understand the basics - from sauces to poultry to vegetables? Where are the areas that simply must be taught in class? Any ideas?

I have time for a question for you! What does the word "cookie" mean?

(noun: pl., -ies.) A small, usually flat and crisp cake made from sweetened dough. Slang A person, usually of a specified kind: a lawyer who was a tough cookie....
JD - Its the guy on a ship who hasn't shaved in a week wearing a white apron and a little white hat smoking a cigarette while making some sort of meal he calls chow.
