A few days later... Easter Corn Pudding


Yum! Although the creamed spinach won't be vying for my top 5 favorite items I've cooked, the corn pudding (Recipe #7) did a good job recovering the day. It was a basic mixture of corn, sauteed onions (oops... had to saute twice as i left the wrong burner on!), a few spices, and the key ingredient that held them together - eggs! Put it in the oven at 350 degrees, and let it sit.. for over an hour? Yes, really. I ended up putting it in for almost 1 hour and 20 minutes... which is interesting, especially since I used a stoneware 8x8 pan to cook it in (thanks, Pampered Chef). Still.. it was quite tasty.

Oh.. and if you're wondering how I could miss the burnt sauteed onions.. the picture above is my handy work on Sunday - in the middle of the "handiness"... :)
